Stir-fried tofu with pineapple

Ingredient

  • 450gr tofu
  • Salt, pepper
  • Minced garlic
  • 5 tablespoons cornstarch

Vegetable

  • 200gr red bell pepper
  • 1 onion
  • 3 chopped green onions
  • 120gr pineapple cut into pieces
  • 2 minced garlic cloves
  • 1 small piece of grated ginger
  • Sesame oil

Sauce part

  • 180ml pineapple juice
  • 120ml filtered water
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons tomato paste
  • 1 tablespoon brown sugar
  • Salt and pepper
  • Cornstarch mixture (1 tablespoon cornstarch mixed with 1 tablespoon filtered water)

Making

  • Make the sauce by mixing pineapple juice, water, soy sauce, rice vinegar and sugar. Set aside
  • Drain all the water from the beans and cut them into small pieces
  • Put the cut beans in a large bowl, mix with garlic, salt, pepper and cornstarch. Coat the cornstarch evenly over the bean pieces
  • Fry the beans until golden
  • Sauté garlic and ginger, add bell peppers, onions and green onions and stir-fry until soft
  • Add the sauce, increase the heat until the sauce boils and reduces, then add the cornstarch mixture prepared above. Mix well until the sauce thickens
  • Add tofu and pineapple and stir until the sauce is absorbed. Add salt and pepper if needed
